Certification Program
To become a certified Japanese cuisine chef
In April 2016, the Ministry of Agriculture, Forestry and Fisheries of Japan established the "Guidelines for Certification of Cooking Skills for Japanese Cuisine in Foreign Countries." The aim of these guidelines is to enhance the communication of Japanese food and dietary culture overseas. Foreign chefs specializing in Japanese cuisine can voluntarily seek certification from private organizations once their knowledge and cooking skills reach a certain standard.
The certification process involves a comprehensive 4-week course, where participants will learn everything from basic techniques in Japanese cuisine to proper dining etiquette. After completing the course, candidates will take a test. Those who pass will receive a certification along with a bronze medal.

Culture
You will learn about the history, culture, manners, and background of Washoku.
This will help you understand Japanese cuisine more deeply.
Lectures
You will take lectures on food and ingredients used in Washoku.
You will also go through the basics of cooking such as hygiene and safety.
Technical Lessons
From how to use the equipment properly to how to store each ingredient.
You will learn the techniques as you learn a wide variety of Japanese cuisine.
ex: Ramen, Yakitori, Sushi etc.
Final exam
Your final exam will include both written and technical examinations.
If you pass the exam, you will obtain the certificate and bronze medal.
